Recipe Ingredients for Julie's Chili

2 cups green pepper, chopped
1 1/2 tablespoons garlic, chopped
3 cups onion, chopped
1 tablespoon olive oil
1.63 pounds ground beef, 92% lean, drained
1 cup vegetable broth, canned
15 1/2 ounces light red kidney beans, rinsed
15 1/2 ounces dark red kidney beans, rinsed
28 ounces diced tomatoes, canned
29 ounces tomato sauce, canned
6 ounces beer
1 cup corn, frozen
1 1/4 cups spinach, frozen
1 tablespoon worcestershire sauce
1 teaspoon hot sauce
1 tablespoon dried oregano
2 teaspoons garlic powder
1/2 teaspoon ground red pepper
3 tablespoons cumin
1 teaspoon ground black pepper

Recipe Directions for Julie's Chili

  1. In large pot, saute onion, garlic and green pepper in olive oil.

  2. Brown beef in separate frying pan.

  3. Drain beef in colander and add to pot.

  4. Add vegetable broth and let it cook over medium low heat as you assemble spices (last 5 items listed in ingredients).

  5. Add spices to pot and cook for 5 minutes, stirring often.

  6. Add beans, tomatoes, tomato sauce and beer to pot and continue to cook over medium high heat.

  7. Add corn, spinach, hot sauce and Worcestershire sauce to pot.

  8. Cook over low heat for 1 hour.

  9. Put into fridge and let cool, then reheat when ready to eat.
