My mother got the recipe from Julia and this is the one we make when we make Spaghetti Carbonara. The dish is not hard to make, just time consuming and terrible for you. In other words, it tastes fantastic.

Recipe Ingredients for Julia's Spaghetti Carbonara

8 oz of spaghetti
2 quarts water
1 lb bacon, cut into pieces
1 onion (large), chopped
1 cup white wine
4 eggs

Recipe Directions for Julia's Spaghetti Carbonara

  1. Start the spaghetti:

  2. Place water in a pot and place on the stove. Bring water to a boil. Add the spaghetti pasta. Cook until done. Drain and rinse in a colander.

  3. Sauce:

  4. While spaghetti is cooking, cook bacon pieces slowly on the stove over low heat until crisp. Remove the bacon. Drain off all but 1 TBSP of bacon fat in the pan. Lightly, slowly brown the onions. After the onions are browned add 1 cup white wine. Let sauté about 5 minutes on low heat.

  5. After spaghettis is done, rinse, return to pot. Pour the onion/wine mixtures over the spaghetti. Add bacon and 4 raw eggs. Stir quickly. Run to the table and serve.

  6. May be served with grated parmesan or Romano cheese.

  7. Yield: 4 portions

  8. This recipe was given to me by my friend Capt Julia Ray in 1988. She learned this recipe from her Italian landlady when she was on active duty in the Air Force at Rimini Air Base. This carbonara recipe is unique in that is no cream. It is delicious.
