I got this recipe from a great cook in STP! But there are no calories spared in this recipe it goes all out. To cut calories I use splenda brown sugar, reduce the oil, and use the (Cream Cheese Icing) sparingly. From the original recipe I changed the white flour to half whole wheat and white sugar to brown.

Recipe Ingredients for Julia's Carrot Cake

1 c flour, all purpose or cake flour
1 c flour, whole wheat
2 tsp baking soda
2 tsp cinnamon
1/2 tsp salt
1 1/2 tsp baking powder
3/4 c canola oil
2 c Brown Sugar
3 large eggs
3/4 c milk
2 c carrots, shredded
1 c crushed pineapple
1 c coconut
1 c walnuts
1 c raisins

Recipe Directions for Julia's Carrot Cake

  1. Preheat oven to 375 degrees farenheit.

  2. Grease and flour a 9" x 13" pan.

  3. Sift flour, baking soda, cinnamon, salt, and baking powder in a bowl and set aside.

  4. Cream oil and sugar together with an electric mixer, add eggs and then milk mix well.

  5. Add dry ingredients to wet ingredients.

  6. Fold in carrots, pineapple, coconut, walnuts, and raisins.

  7. Pour into baking pan, bake in oven for 1 hour or until top springs back when touched and toothpick comes out clean.

  8. Frost with Cream Cheese Icing if desired.
