A great way to use the leftover pulp from your juicer. This is your basic 2 egg cake recipe, but with a healthy side to it.

Recipe Ingredients for Juicer Cake

2 1/2 cup Gold Medal All Purpose Flour
2 1/2 tsp Baking Powder
0.33 cup Vegetable Oil, Canola
1/2 cup Egg Beaters
3 oz Sugar Blend
8 oz Orange Juice Original
1 cup, chopped Kale
1 cup, chopped Carrots
1 tsp Salt
1 tsp Vanilla Extract
1 Apple Apples
1 pear, medium (approx 2-1/2 per lb) Pears

Recipe Directions for Juicer Cake

  1. Beat Splenda Blend, Egg Beaters, vanilla, and oil together until light.

  2. Sift dry ingredients together and add to blended Splenda, egg, and oil, alternating with a little of the orange juice. Beat with electric mixer until well blended, about 2 minutes. Fold in the pulp left over from making juice in your juicer. Today I used kale, carrots, apples and pears, but you can use whatever fruit/veggie combo you like. I do not recommend using celery because of the strings. Pour into a Bundt pan that has been sprayed with Pam baking spray. Bake at 375 for 40 minutes. Cool on rack.
