Light and fluffy strawberry pancakes.

Recipe Ingredients for Judy's Strawberry Pancakes

1 cup all purpose flour
1/2 cup whole wheat flour
1/3 cup corn meal
2 tbsp oatmeal
1 tsp baking soda
2 tsp baking powder
3/4 tsp salt
3 tsp sugar
2 large eggs
2 cups buttermilk
1 cup strawberries

Recipe Directions for Judy's Strawberry Pancakes

  1. optional ingredients:

  2. 4 tbsp unsalted butter, melted

  3. combine both wet and dry ingredients

  4. wash, chop and dust strawberries with extra flour (so they don't turn the batter pink), mix into batter

  5. butter a hot griddle and drop 1/2 cup batter per pancake. Makes about 20-24 pancakes.
