Can add bacon-dripping for additional flavor and Calories. In place of vinegar and oil dressing can use low fat Rasberry dressing for less Calories.

Recipe Ingredients for Judy's spinach salad

48 grams bacon (approx. 4 slices)
1 pound baby spinach
3 green onions (chopped)
5 radishes, thinly sliced
2 eggs, hard-cooked, sliced
1 cup sliced avacado
2 tablespoons vinegar
1/4 cup olive oil
1 pinch of sugar
1 salt and pepper

Recipe Directions for Judy's spinach salad

  1. Cut bacon into 1 inch pieces and fry until crisp; drain.

  2. Wash and trim spinach; pat dry with paper towels.

  3. Combine vinegar, oil, sugar, salt and pepper in large bowl; add green onions, radishes and avacado, coating well with dressing. Add bacon and eggs. Toss and serve.
