Recipe Ingredients for Judy's angel food cake

3/4 cups sugar, sifted
1 cup Flour, sifted
12 large egg whites, room temperature
1 tsp cream of Tartar
1/4 tsp salt
3/4 cup sugar, (use super fine if available)
1 1/2 tsp vanilla
1 1/2 tsp lemon juice
1/2 tsp almond extract

Recipe Directions for Judy's angel food cake

  1. Whisk together 3/4 cup sugar & flour.

  2. Beat egg whites at low speed until frothy, add cream of tartar and salt.

  3. Beat mixture until it forms soft billowy mounds, then add 3/4 cup sugar by 1 Tbs at a time until all is added and soft shiny peaks are formed.

  4. Add vanilla and almond extracts, add lemon juice, mix well.

  5. Fold in sifted flour/sugar mixture.

  6. Pour into an ungreased tube pan. Bake at 325 degrees for 50 to 60 minutes or until done.

  7. Invert pan and cool completely (2-3 hours).
