Recipe Ingredients for Judi's Buttermilk Pancakes

2/3 cup flour (2/3 cup pancake mix)
1/2 teaspoon baking soda
2 teaspoons sugar
1 egg
1 tablespoon smart balance (melted)
1 cup buttermilk

Recipe Directions for Judi's Buttermilk Pancakes

  1. Whisk egg a little and add melted butter, then

  2. whisk together a little more. Add the buttermilk

  3. and whisk that also.

  4. Finally, add mix (the dry ingredients) and stir together. It should have a few little lumps. If it seems too thin, add a little more mix; if too thick add a little more buttermilk.

  5. Fry in ungreased pan until browned, flip and repeat.
