Lots of texture, flavour, yummy surprises in this substantial salad. Consider adding slices of grilled chicken, cold salmon or chopped eggs to add some protien and make this a meal. This salad travels well for work-day lunches if you have a fridge at work. I put the dry stuff (seeds, croutons, fried onions) in a sandwich bag and add it in at lunch.

Recipe Ingredients for Jude's Piggy Salad

1/2 cup lettuce
1/2 tomato
1/3 cup asparagus, steamed
1/3 Avocado
1/3 cup Broccoli, Stalks
1 tbsp sunflower seeds
1 tbsp pumpkin seeds
1/2 cup croutons
2 tbsp Dressing, Creamy Caesar

Recipe Directions for Jude's Piggy Salad

  1. Chop asparagus and broccoli into small pieces and lightly steam (less than 5 minutes - just enough to bring up the beautiful green colour and soften up the stalks. You might save the lovely green water for soup or gravy base).

  2. I buy a mix called "Rainbow Salad" which is match-sticks of broccoli and cauliflower stalks, some cabbage and shredded carrot (I called it Broccoli Stalks so the database would analyse the recipe). I can get it at almost any grocery store in Ontario.

  3. I make my own croutons by spraying my favourite 12 grain bread, cut into cubes, with good quality Olive Oil, shake on a bit of garlic POWDER (not salt) and baking for about 20 minutes at 350 degrees - until they are dry, before they get too dark. I do about half a loaf at a time and store in zipper bags in the cupboard for several days.

  4. The Fried Onions are a bad treat, along with the Bacon Ceasar Salad dressing (Compliments) that I use. These are my wicked treats - I don't add any fat/butter/oil to the rest of the day if I have this. It's just as good with a lower fat dressing, and almost as good without the fried onions.

  5. If you like peppers or mushrooms, add them in! Anything goes!

  6. Mix it all up and enjoy!
