Recipe Ingredients for Juana's tortilla de papas

2 tsp olive oil
2 medium potatoes, chopped
1 small onion, chopped
1 hot green chili pepper, chopped
3 cloves garlic, chopped
1 tbs ginger root, chopped
1/2 teaspoon salt
1 teaspoon black pepper
1/2 teaspoon cumin
1/2 teaspoon oregano
1 teaspoon cayenne
1 tbs fat-free yogurt
3 eggs, beaten

Recipe Directions for Juana's tortilla de papas

  1. Fry onion, potatoes, chili pepper, garlic, and ginger in olive oil on medium-high heat until potatoes are tender.

  2. Pour beaten eggs over everything.

  3. Cover skillet and cook slowly on medium-low heat for 7 minutes or until eggs are cooked through.
