vegetable soup with kidney beans great as a snack or light lunch with crackers.

Recipe Ingredients for joy veggie and kidney soup

2 cup celery
1 1/2 cup kidney beans
5 cup cabbage
2 medium onion
3 clove garlic
3 1/2 cups stewed tomatoes
1 quart chicken broth
3 cups water

Recipe Directions for joy veggie and kidney soup

  1. dice onion, garlic, celery,with 1/2 cups broth add to 3 quart soup pot and cook on high for 7 minutes.

  2. dice all other vegetsbles and add to pot

  3. add remainder of chicken broth, water, 14.5 oz. can stewed tomatoes.

  4. pour can of kidney beans into strainer to strain off liquid then add to pot.

  5. Reduce heat to medium low and cook 15 minutes.

  6. add salt and pepper to taste.
