Low fat banana muffin recipe. More bananas, less oil. Best eaten when warm, right out of the oven.

Recipe Ingredients for Joy of Cooking Reduced Fat Banana Muffins

2 cups of flour
3/4 cup of sugar
1 teaspoon of baking soda
1/2 teaspoon of salt
1 large egg
1 1/3 cup of ripe bananas
1 tablespoon of oil

Recipe Directions for Joy of Cooking Reduced Fat Banana Muffins

Add all dry ingredients in one bowl. Add all of wet ingredients in second bowl and whisk. Slowly add dry ingredients to wet ingredients, gently stirring until all the dry ingredients are wet. Do not over mix muffin batter.
