I basically cut the recipe in half because I was just making it for my boyfriend and myself and the last thing we need is a whole cake sitting around the house! I cooked it in a 6 or 7 inch diameter cast iron mini-dutch oven.

Recipe Ingredients for Joy of Cooking Pineapple Upside-Down Cake

2 T. butter
1/4 c. brown sugar
4 canned pineapple slices
1 large egg
1 T. buttermilk
1/4 t. vanilla extract
1/2 c. flour
1/4 c. sugar
3/8 t. baking powder
1/8 t. baking soda
1/8 t. salt
3 T. butter, softened
3 T. buttermilk

Recipe Directions for Joy of Cooking Pineapple Upside-Down Cake

  1. Have the ingredients at room temperature.

  2. Preheat the oven to 350 F.

  3. Drain the pineapple slices and lay out on paper towel to dry off.

  4. In a skillet or cake pan, put 2 T. butter and place it in the oven until the butter melts, or melt on the stovetop. Tilt to coat all sides of the pan. Sprinkle 1/4 c. brown ssugar evenly over the bottom of the pan. Artfully arrange the pineapple slices in the bottom of the pan.

  5. In a small bowl, whisk together the egg, 1T buttermilk and vanilla.

  6. In a large bowl, combine the flour, sugar, baking soda, baking powder and salt, and stir to mix well. Add 3 T. butter and 3 T. buttermilk, and beat on low speed just until the flour mixture is moistened.

  7. Increase the speed to medium (or high for a hand-held mixer) and beat for exactly 1.5 minutes (90 seconds). The batter will be stiff.

  8. Add 1/3 of the egg mixture at a time, beating for exactly 20 seconds and scraping the bowl after each addition.

  9. Scrape the batter over the fruit in the pan and spread evenly. Bake until a toothpick inserted in the cake comes out clean, 30 to 40 minutes.

  10. Remove the cake from the oven and tilt the pan in all directions to detach it from the sides of the pan. Let cool for 2-3 minutes before unmolding.

  11. Invert a serving platter on top of the pan. Cover your hands with oven mitts and turn the cake onto the platter. Lift off the pan. If any fruit pieces are askew, use a fork to push them back into place. If brown sugar is left in the pan, scrape it up and spoon it over the cake.
