Great with chili, split pea soup or butternut squash soup. Spice it up with some finely minced hot peppers. Ham it up with some Ham! (seriously, it's so good)

Recipe Ingredients for Joy of Cooking - Northern Cornbread

1 1/4 cups cornmeal
3/4 cup all-purpose flour
2 tbsp sugar
2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
2 large eggs
1 1/3 cups buttermilk
2 tbsp oil

Recipe Directions for Joy of Cooking - Northern Cornbread

  1. Preheat the oven to 425 F.

  2. Grease a 9x9 inch pan or standard 12-muffin pan or line the muffin pan with paper cups.

  3. In a large bowl whisk together the dry ingredients.

  4. In a separate bowl beat the eggs and then whisk in the milk.

  5. Add the wet ingredient to the dry ingredients and stir until just moistened.

  6. Fold in the oil (or use melted butter).

  7. Scrape the batter into the pan and tilt to spread evenly (if using the square pan). Bake unil a toothpick inserted in the center comes out clean, 10 to 12 minutes in a muffin pan, 20 to 25 minutes in a square pan. Serve hot.
