Recipe Ingredients for Joy of Cooking Braised Chicken Breasts

1 lb chicken breasts, boneless and skinless
1 T butter
1 T whole wheat pastry flour
1 salt and pepper to taste

Recipe Directions for Joy of Cooking Braised Chicken Breasts

  1. 1 lb is about two breast pieces. Cut each length wise in 2 flat half pieces.

  2. Salt and pepper each piece, dredge each with 1/2 T flour.

  3. Heat butter in heavy pan with lid. put chicken pieces in and cook on one side. Turn each chicken piece. Cover pan and turn heat to low and let braise for about 15-20 minutes.

  4. add a little water if needed
