A layered lasagne type stuffed pepper with LOTS of great veggies. Very satisfying

Recipe Ingredients for JoSi's Stuffed Peppers

3 oz. Beef, Ground, 95% Lean Meat / 5% Fat
2 Mushroom, Portabella
1 Green Pepper
1/4 Red Pepper
3/10 vidalia onion
1/4 zuchinni
1/4 yellow squash
1 tablespoon Olive Oil
2 tablespoon Basil
2 tablespoon Oregano
12 oz crushed tomatoes
1 oz fontina cheese
1 dash salt
1 dash black pepper

Recipe Directions for JoSi's Stuffed Peppers

  1. Chop into large chop size the red pepper,onion,squashes in olive oil til al dente. add chopped fresh oregano, pepper and set aside.

  2. Cut green pepper in half and steam til al dente and put in baking dish and preheat oven to 350

  3. Brown beef and add portabella's chopped dime size with a small amount of oil. Add wine to deglaze then adde tomatoes with fresh basil salt/pepper. Add water if necessary to get good consistency. Simmer for 20 minutes

  4. Layer sauce mix, 1/4 of the fontina cheese sliced very thin, sauted veggies, sauce mix and top with fontina cheese.

  5. Bake in oven for 20 to 30 minutes. Enjoy with fresh salad.
