Healthy version of Josh's spaghetti

Recipe Ingredients for Josh's Stir Fry Spaghetti without Sausage

1 red onion
1 medium zuchinni
1/2 red bell pepper
2 tsp minced garlic
2 tsp basil
1 tsp thyme
2 tsp oregano
1 tsp crushed red pepper
15 oz diced stewed tomatoes
3 tbsp olive oil
7 oz spaghetti noodles

Recipe Directions for Josh's Stir Fry Spaghetti without Sausage

  1. Cook noodles, drain, sprinkle with olive oil (not the 3 tbsp) and set aside. Drain about 1/2 of the juice off of the stewed tomatoes.

  2. Bring wok to very high temp on high, add olive oil, then toss in veggies.

  3. While veggies are sautee-ing sprinkle all spices on top and continuously stir until they are fork done (NOT mushy). Add stewed tomatoes and mix until hot.

  4. Serve over noodles. Linguine noodles also work well.
