If you want a burrito... This recipe is assuming our homemade refried beans, which are essentially heated and mashed with a potato masher. They are lower in sodium than canned beans, and a lot tastier, too.

Recipe Ingredients for Josh's Big Burrito

1 whole wheat tortilla
4 oz. pinto beans, mashed
3/4 oz cheddar cheese, grated

Recipe Directions for Josh's Big Burrito

  1. Spread beans on tortilla. If folding it in half, spread along one half of the burrito. If wrapping properly, confine the beans to the center of the tortilla. Top with cheese and either wrap the burrito, or fold in half.

  2. Heat in nonstick skillet sprayed with Pam until lightly toasted, then flip and do the same on the other side.

  3. Serve with Salsa and sour cream, if desired.
