2/3 whole wheat flour --- 1/3 white flour

Recipe Ingredients for Jo's Whole Wheat Bread

1 cup flour
2 cups whole wheat flour
1/2 tablespoon salt
1 tablespoon sugar
1 tablespoon yeast
1/4 cup oil
1/4 cup honey
1 cup water

Recipe Directions for Jo's Whole Wheat Bread

  1. Add yeast, sugar and 1 cup of the water. Set aside.

  2. Mix dry ingredients together and make a well in the center with a wooden spoon.

  3. Add the rest of the water, oil, and honey.

  4. With a wooden spoon start stirring in the middle. Very gradually as you stir, the flour will come little by little into the mixture from the sides. When enough flour has come into the mixture to make a runny dough add yeast.

  5. DO NOT STIR ONCE THE YEAST HAS BEEN ADDED.

  6. Let rest 20 minutes.

  7. It will start to foam towards the end of the 20 minutes.

  8. Beat down and gradually stir in the rest of flour.

  9. The last little bit will have to be worked in by hand.

  10. Cover with a clean dish cloth and raise until double (about 30-40 minutes).

  11. Shape into loaves or rolls; put into well greased pans (or casserole dish for the rolls).

  12. Raise until double (about 30-40 minutes).

  13. Bake at 350 F for 30 minutes or until a deep golden brown.
