Recipe Ingredients for JO's spinach & chickpeas

1 tbsp olive oil
1 red onion, sliced
2 garlic cloves, thinly sliced
1/4 tsp cumin powder
1/4 tsp chili flakes
1/4 tsp mustard seeds
400 g chickpeas
100 ml chicken stock
800 g spinach

Recipe Directions for JO's spinach & chickpeas

  1. In a pan, heat the olive oil and fry the onions, garlic and spices for about 4?5 minutes.

  2. Add the chickpeas and stock and cook for another 5 minutes.

  3. Add the spinach and cook for 2-3 minutes, until the spinach is wilted.

  4. Season and finish with a little lemon juice and extra-virgin olive oil
