Recipe Ingredients for Jool's favourite beef stew

1 tablespoon olive oil
1 onion, chopped
3 tablespoons fresh sage , chopped
2 tablespoons tomato paste
350 g turnip, diced
230 g carrots, diced
500 g yams, diced
350 g butternut squash, diced
240 g potato, diced
420 g stewing beef , diced
1 cup water
375 ml non-alcoholic red wine
2 tablespoons rosemary , minced
1 clove garlic, minced
1 tablespoon lemon zest

Recipe Directions for Jool's favourite beef stew

  1. Preheat over to 300. Put the oil into a stove to oven casserole. Add onion and sage and fry.

  2. Add meat to the pan with all the vegetables, the tomato paste, wine and water/stock (note: I said non-alcoholic because I don't know how to otherwise indicate that the alcohol is burned off in the recipe). Gently stir.

  3. Bring to a boil, cover and put it into an oven.

  4. Cook for 3-4 hours, until meat is falling apart.

  5. Turn down low and keep until dinner.

  6. When you serve, mix the lemon zest, rosemary and garlic in a little bowl and sprinkle on top of stew before eating. Magic!
