Good use of a slow cooker (crockpot) for these cold winter nights. Throw all the stuff in raw before you go to work, leave for eight hours or so on slow (or four hours high heat), come home and enjoy it. You'll have to fiddle about with the seasoning to get it to your taste but that shouldn't take much :) This recipe also freezes well.

Recipe Ingredients for Jon's Crockpot Beef Stew

454 g stewing steak
454 g baby potatoes
454 g passata
340 g mushrooms
2 leeks
3 carrots
30 g worcestershire sauce
2 tsp mixed herbs
30 g corn flour
4 beef stock cubes
3 pints cold water

Recipe Directions for Jon's Crockpot Beef Stew

  1. Make sure your crockpot/slow cooker is big enough to fit everything in! If not, scale everything down by half and work from there... the principle is the same.

  2. Roughly chop the leeks, carrots and mushrooms into 1 inch pieces. If the steak isn't already chopped, do the same with that.

  3. Wash potatoes and add whole to the crockpot with the skin on (this helps to keep them together and allows them to keep their own taste).

  4. Throw everything into the slow cooker except the corn flour and three of the stock cubes.

  5. Cook on low power for around eight hours or on high power for around four hours.

  6. Add the remaining stock cubes. Mix up the cornflour with a small amount of water and add to the pot. Give everything a good stir, have a taste and tweak the seasoning to your liking.

  7. Leave for another 15-20 minutes and then serve.
