Recipe Ingredients for Jolof Vegetables

2 cups black-eyed peas
1 eggplant
1 tablespoon vegetable oil
1 onion
1 tablespoon ginger
1 jalapeno pepper
2 cloves garlic
1 green bell pepper
2 tomatoes
2 tablespoons tomato paste
1 teaspoon curry powder
2 carrots

Recipe Directions for Jolof Vegetables

Heat oil in saucepan. Add chopped onion, eggplant, peppers, ginger and garlic. Cook, stirring, about 10 minutes. Add tomatoes and tomato paste, spices. Simmer 10 minutes more. Add black-eyed peas and simmer 10 minutes.
