Jollof Rice Recipe

Really tasty, low fat, african dish of savoury tomato rice often served with meat but delicious on it's own.

Recipe Ingredients for Jollof Rice

1 onion, chopped
1 red bell pepper, chopped
400 g tinned tomato
2 tbsp tomato paste
2 garlic cloves
1 tsp ginger powder
1 tbsp ground cumin
1 tsp dried thyme
1 tsp cinnamon
1 vegetable bouillon cube
1 tsp salt
1 tsp cayenne pepper (optional)
1 tsp bay leaf, crumbled
1 cup carrots, diced
1 cup mixed vegetables
1 tbsp olive oil
2 cups rice
2 cups water

Recipe Directions for Jollof Rice

  1. In a blender, combine all of the ingredients except the onion, carrots, mixed vegetables, oil, rice and water. Blend for about 1 minute.

  2. Wash the rice until water is no longer cloudy, drain off the excess water and set aside.

  3. In a large saucepan, stir-fry the chopped onions, carrots and mixed vegetables for about 3 minutes on high heat.

  4. Add the sauce from the blender, 2 cups of water and then stir in the rice.

  5. Cover the pot tightly and when the sauce begins to boil, turn down the heat to medium, stir the pot once more and recover.

  6. Preheat the oven to 180 C and use spray oil to spray a large baking pan (13" x 9") or pyrex dish.

  7. After 10 mins, the rice should be moist, but not watery.

  8. Transfer the entire contents of your saucepan to the baking pan.

  9. Cover and seal with aluminum foil and place in oven for 30 minutes.
