A V8 based broth makes this mixture of chicken, potatoes, carrots, and spices more than just a stew. Has a veggie based taste, a little exotic. We always skim the fat off of the surface as it cools, too, so it's even better for you. The "Servings" are an estimate. Honestly it makes about 20 regular ladles plus some.

Recipe Ingredients for John's Basic Chicken/Potato Stew

20 oz. chicken
4 medium potatoes, no skin, sliced
3 medium carrots, sliced
1 onion
4 cloves garlic
16 oz. V8
2 tbsp potato flakes
1/2 tsp rosemary
1/2 tsp celery salt
1/2 tsp garlic salt
1/2 head cabbage
1 cup radishes, white icicle

Recipe Directions for John's Basic Chicken/Potato Stew

  1. Cook chicken in a separate pan. Drain off the fat. De-bone.

  2. Put all ingredients into a large pot, add water until you like the consistency and heat until potatoes and carrots are soft.

  3. Skim fat off of the top of the stew as desired.
