From the owner/curator of the Museum of Appalachia in Norris, Tennessee. A very old recipe. Served to Alex Haley (author of "Roots") and other well-knowns like Oprah Winfrey, Brooke Shields, and Senator Lamar Alexander.

Recipe Ingredients for John Rice Irwin's Baked Onions

6 medium onions
1 tsp salt
2 tbsp butter

Recipe Directions for John Rice Irwin's Baked Onions

  1. Leave skins on onions, just remove the paper parts that are falling off anyway. Preheat oven to 425 degrees.

  2. Put onions into a pan that fits. Bake 45-60 minutes, depending on the size of the onions. When they are done, they will feel mushy, not crunchy when stuck with a fork.

  3. Gently pop them out of their skins and serve with salt and butter.
