Recipe Ingredients for John Clancy's Cheesecake

270 grams graham crackers, cinnamon, crushed (one third of a box)
4 T. butter, melted
24 oz. cream cheese, softened
1 1/4 c. sugar
6 eggs, separated
8 oz. sour cream
1/3 c. all purpose flour
2 t. vanilla
2 T. lemon zest
2 T. lemon juice

Recipe Directions for John Clancy's Cheesecake

  1. Generously grease a 9 x 3 inch springform pan with Pam. Place pan in the center of a 12" square of aluminum foil; press foil up around the sides of the pan.

  2. Combine the graham-cracker crumbs with the melted butter in a small bowl until well-blended. Press 1 Cup of mixture onto bottom and up sides of pan, saving rest for topping later. Chill prepared pan while making filling.

  3. With electric mixer on low speed or with a wooden spoon, beat cream cheese until soft. Gradually beat in sugar until light and fluffy.

  4. Beat in egg yolks, one at a time, until well-blended. Stir in sour cream, flour, vanilla, lemon zest and juice until smooth.

  5. Beat egg whites in a separate bowl until they hold stiff peaks. Fold whites into cheese mixture, souffle'-fashion, until well-blended. Pour into prepared pan

  6. Bake in a moderate oven, 350 degrees, for one hour and 15 minutes, or until top is golden; turn off oven for one hour.

  7. Remove cake from oven and allow to cool on a wire rack at room temperature. Sprinkle remaining crumbs on top.

  8. Chill overnight before serving. Dust with confectioner's sugar just before serving.
