Recipe Ingredients for Joe's Special

1/2 lb ground beef
1/4 cup onion
1/2 cup mushrooms
3 cups spinach
2 eggs
1/4 cup mozzarella cheese

Recipe Directions for Joe's Special

  1. brown beef in skillet and add chopped onion and sliced mushrooms

  2. add sliced spinach a bunch at a time until wilted then add more

  3. stir in eggs(slightly beaten) and salt and pepper to taste

  4. sprinkle shredded cheese on top and place under broiler until cheese is melted.
