Modified for italian sausage instead of ground beef

Recipe Ingredients for Joe's Special

1 lb ground pork
4 eggs
10 oz frozen spinach
1 onion
1 c sliced mushrooms
4 cloves garlic
1 T anise seed
2 T olive oil
1 salt
1 pepper

Recipe Directions for Joe's Special

  1. Grind pork shoulder with anise seed to make italian sausage

  2. In a very large skillet, saute chopped onion and mushrooms in olive oil until onion is just translucent.

  3. Add ground meat and brown thoroughly.

  4. Meanwhile thaw and drain spinach.

  5. Add spinach, minced garlic and beaten eggs to pan.

  6. Add salt and pepper.

  7. Turn mixture over until eggs are well done.
