A Low Fat Version of My Mom's Baked Ziti Recipe.

Recipe Ingredients for Joe's Healthier Baked Ziti

1 pound Penne Dry
4 quarts Water
1 cup Low Fat Ricotta
16 oz Part Skim Mozzarella Cheese , half grated , half sliced into 9 1/4 inch slices
1 oz Pecorino Romano Cheese, finely grated
2 large Eggs, beaten
1 cup Fresh Ital;ian Flat Leaf Parsly, chopped
1 tsp Garlic Powder
4 1/2 cups tomato sauce

Recipe Directions for Joe's Healthier Baked Ziti

  1. Bring 4 quarts of water to a boil in a large pot.

  2. Add the pasta and cook for 11 minutes or until al dente, Drain the pasta throughrally in a colendar.

  3. In a mixing bowl add the ricotta cheese, pecorino romano cheese, the grated mozerella chese, both eggs the chopped parsly and the garlic powder.

  4. Mix the filling until thouroughly combined.

  5. Add the drained pasta and mix until the pasta is completely coated with the filing.

  6. Transfer the filled pasta mixture to a 14" long x 9 " wide x 2" deep baking dish and smooth it out evenly.

  7. Cover the top of the pasta mixture with the tomato sauce and smooth it out evenly on top.

  8. Arrange the remaining 9 slices of mozzarella cheese into a grid pattern on top of the sauce.

  9. Place the baking dish into a 350 degree preheated oven and bake until the mozzarella cheese on top is melted and lightly browned.

  10. Each melted mozzarella rectangle outlines a portion, cut and serve.
