My hubby's "world famous" breakfast dish. Quick and easy, but he can make a real mess with it!

Recipe Ingredients for Joe's Breakfast Scramble

2 potatoes, diced
1/2 lb breakfast sausage, cooked and drained
1 onion
2 cloves garlic
3 eggs
2 T canola oil

Recipe Directions for Joe's Breakfast Scramble

  1. Cut potatoes in half and microwave for 1 minute. Then dice into tiny pieces and put in hot skillet (use a deep one if you have it) with oil. Cook on medium for about 5 minutes.

  2. Dice onion and garlic. Add to skillet. (My husband likes to move the potatoes to the outside and put the onion and garlic in the middle of the skillet.) Cover.

  3. While onion, garlic and potatoes are cooking, brown sausage in another skillet.

  4. Drain and rinse the sausage after it is cooked through.

  5. Add sausage to potatoes. Cover and cook on low.

  6. Crack eggs into a separate bowl and scramble. (Milk can be added, just a splash or two, for a fluffier egg).

  7. In sausage pan, cook eggs, scrambled.

  8. Add cooked eggs to potato skillet.

  9. Optional: Sprinkle some grated sharp cheddar or monteray jack on top and allow to melt.

  10. Serve hot. Add salt and pepper to taste.
