Great for using leftover boiled potatoes or bulk sausage (from Breakfast burritos), filling without being overly fattening. Great start for the day.

Recipe Ingredients for Joe's Breakfast Salad

22 ounces potatoes (cooked in skins), about six small
8 ounces ground pork
2 tablespoons olive oil
1/2 teaspoon onion powder
1/2 teaspoon black pepper
1 egg

Recipe Directions for Joe's Breakfast Salad

  1. If using new sausage (as opposed to leftovers) brown and drain the fat. Add in the olive oil and the diced potatoes. Sprinkle with the onion powder and black pepper.

  2. Scramble the egg separately, then add to the meat and potatoes. Heat through and serve.
