Recipe Ingredients for Joel's wife's mom's muffin's

3/4 cup whole wheat flour
1 1/2 cup rolled oats
1 egg
3/4 cup bran flakes
1 cup skim milk
1/4 tsp salt
1 tsp baking powder
1/4 tsp baking soda
2 tbsp vegetable oil
1/2 cup golden raisins
1/2 cup peanuts
1/2 cup pitted dates
1/4 cup sunflower seeds
1/2 cup splenda
1/2 cup unsweetened applesauce

Recipe Directions for Joel's wife's mom's muffin's

  1. Mix the All Bran cereal and milk then let stand for a few minutes. In a large bowl, mix flour, sugar (sweetner), baking powder, baking soda, salt and spices. Stir in oat bran, raisins and apple.

  2. In a small bowl, combine egg, oil and applesauce. Stir along with the all bran mixture into the dry ingredients. Spoon into muffin tin. Bake at 350 for 20 minutes.

  3. Joelâ??s notes: We often add things like walnuts and dates (but you can really add anything that grabs your fancy), and we typically bake them for longer than 20 minutes, while keeping an eye on them.
