1 cups sugar
7/8 cups all-purpose flour
3/8 cup unsweetened Cocoa
3/4 teaspoons baking powder
3/4 teaspoons baking soda
1/2 teaspoon salt
1 eggs
1/2 cup milk
1/4 cup vegetable oil
1 teaspoons vanilla extract
1/2 cup semisweet chocolate chips
1/2 cup brown sugar
1 tbsp cornstarch
1 pinch salt
1 cup evaporated milk
1/4 cup unsalted butter, at room temperature
1/2 cup coconut
1/2 tsp vanilla
1/2 cup toasted chopped pecans

Recipe Directions for Joel's Birthday German Chocolate Cupcakes

  1. Chocolate Cupcake Directions

  2. 1. 1 Heat oven to 350F.

  3. 2. 2 Stir together sugar, flour, cocoa, baking powder, baking soda and salt in large bowl. Add eggs, milk, oil and vanilla; beat on medium speed of mixer 2 minutes. Stir in boiling water (batter will be thin). Pour batter into prepared pans.

  4. CUPCAKES: Line muffin cups (2-1/2 inches in diameter) with paper bake cups. Heat oven to 350F. Fill cups 2/3 full with batter. Bake 22 to 25 minutes. Cool completely. Frost. About 15 cupcakes.

  5. Coconut Pecan Frosting

  7. Directions :

  8. 1) In a heavy saucepan, whisk together brown sugar, cornstarch, and salt. Slowly whisk in evaporated milk until cornstarch is dissolved. Add butter. Butter will be lumpy, but don't worry, it will melt from the heat.

  9. 2) Place saucepan over medium heat. Cook, whisking until butter is melted and mixture is smooth. Whisk continuously until mixture is very thick. Remove from heat. Stir in coconut and vanilla. Transfer to a bowl and let cool to room temperature.

  10. 3) Cover coconut mixture with plastic wrap and refrigerate for 2 hours or until chilled and thick. When cold and thick, stir in pecans and chocolate chips, if using. Spread frosting over cooled cupcakes. If not serving cupcakes right away, keep cupcakes refrigerated until ready to serve or for up to 1 day.
