This was adapted from a full fat version and still very tasty!

Recipe Ingredients for Jodi's Artichoke Quiche

12 oz marinated artichokes (two 6 oz jars)
1 small onions
1/4 c. italian bread crumbs
1/8 tsp. Tabasco sauce
2 c. reduced fat Cheddar cheese
1 c egg beaters
4 slices turkey bacon

Recipe Directions for Jodi's Artichoke Quiche

  1. Drain artichokes, saving marinade from 1 jar.

  2. In marinade, saute onion.

  3. Cut up artichokes.

  4. Mix eggs and crumbs

  5. Stir in remaining ingredients.

  6. Sprinkle with turkey bacon (precooked to be crispy)

  7. Pour into greased 7 x 11 inch pan. Bake at 325 degrees for about 30 minutes.

  8. Let cool.

  9. Serve hot or cool.
