Recipe Ingredients for Jodie's Granola

2 c rolled oats
3/4 c sunflower seeds
3/4 c slivered almonds
1 1/4 c craisins
3/4 c chopped dates
2/3 c honey
2 tbsp butter

Recipe Directions for Jodie's Granola

  1. Preheat oven to 325. Sprinkle oats & seeds/nuts on a large baking sheet. Toast for 20 minutes, stirring twice for uniform toasting.

  2. Sprinkle fruit over mixture & transfer mix to medium bowl; set aside & leave oven on.

  3. During the last few minutes of toasting, bring the honey to a full boil in a 1 1/2 quart saucepan. Reduce heat to med & simmer for 7-9 mins until reaching 275 on a candy thermometer; stir as needed. Remove from heat & stir in butter.

  4. Drizzle hot honey over oat mixture, stirring well after each addition (1/3 of honey at a time). Spread mixture on baking sheet & bake 7 mins, stirring halfway to prevent sticking to pan. Remove from oven and continue stirring occasionally as the mixture cools, breaking into chunks until it has cooled and is no longer sticky. Store in ziplock or airtight container.
