Recipe Ingredients for Jocelyn's Roasted Vegetables

2 lb potatoes
1 lb carrots
2 yellow onions
3 tbsp olive oil
1 tsp salt
1 tsp pepper
4 cloves garlic, crushed

Recipe Directions for Jocelyn's Roasted Vegetables

  1. Cut potatoes into big bite sized pieces.

  2. Use baby carrots or slice into pieces on bias.

  3. Cut onions into large chunks.

  4. Mix all together with oil, S&P, and garlic.

  5. Spread out in one layer on 2 baking sheets or one large roasting pan.

  6. Bake, stirring occasionally with spatula at 375F for 35-40 minutes or until desired doneness.
