Corn, beans, and squash are the classic Three Sisters of Native American agriculture. I think they deserve to be united in one dish. I also think of chili peppers as the fourth Sister, in a culinary sense.

Recipe Ingredients for Joanna's Succotash

3 peppers, hot chili, green, diced
3 peppers, hot chili, red, diced
3 cloves garlic, chopped (optional)
1 tbs. corn oil
2 cups blackeye peas, frozen
1 tomato, diced
1/4 cup water
3 cups corn, frozen
1 cup butternut squash, diced small
1 tsp salt
1/4 tsp allspice
1/4 tsp cayenne

Recipe Directions for Joanna's Succotash

  1. Sauté the jalapeños and (optional) garlic for 2 minutes over medium-low heat.

  2. Add the black-eyed peas and squash. Turn up the heat to medium-high. Cook, stirring, for 3-4 minutes.

  3. Add the tomato and water. Cover and turn heat to low. Simmer for 15-20 minutes, until the peas and squash are tender.

  4. Add the corn and salt, with allspice and cayenne to taste. Bring to a simmer and cook 5 more minutes. (Since lima beans are traditional, I sometimes make it with 1 cup of blackeye peas and 1 cup of frozen lima beans. The latter will take less time to cook, so add them about 5 minutes later than the peas.)
