A reduced sodium chili with good flavor.

Recipe Ingredients for Joanna's Chili

3 lb ground chuck
1 1/2 c chopped onion
1 T garlic
29 oz tomato sauce salted
6 oz Hunt's tomato paste unsalted
1275 g Kuners Kidney beans unsalted (3 15 oz cans)
3 T Williams chili powder unsalted
1 T cumin
1 T oregano
2 T granulated sugar
1 T Socorro salsa seasoning HOT unsalted
1 lb frozen corn
1/4 t salt

Recipe Directions for Joanna's Chili

  1. Cook the ground chuck and remove grease. (ground chuck has more flavor than other cuts)

  2. Add onions and garlic. Cook 3-5 minutes

  3. Add tomato sauce & paste. Add additional water (or beer) until slightly liquidy.

  4. Add drained beans and seasonings (sugar cuts the acidity of the tomatoes) Add more salsa seasoning if you like hotter chili. (Socorro dry salsa seasoning is w/o salt. I find it at Price Chopper)

  5. Add frozen corn

  6. Simmer 20 minutes, add salt to taste.
