Vegetable pancakes are filling, nutritous and delicious. You get 2 really large filling pancakes.

Recipe Ingredients for Jo-Ann's Veggie Pancakes

2 cup Pancake Mix
2 large Egg, Whole
1 large Onions
2 cup, chopped Carrots
1 cup, chopped Squash, Summer, Zucchini, Includes Skin
2 cup Corn, Sweet, Yellow
1 potato medium (2-1/4" to 3-1/4" dia.) Potato, Baked, Flesh And Skin
1.5 cup Spinach

Recipe Directions for Jo-Ann's Veggie Pancakes

combine all and cook in a skillet sprayed with Pam. Once golden brown, put on a sprayed cookie sheet in the oven (400 degrees) to cook further for 20 mins.
