Recipe Ingredients for JM Veggie soup

3 tablespoon oil, olive
1 cup(s) onion(s), chopped
1 teaspoon oregano, dried
2 cloves garlic
4 cups zucchini, sliced
1 cups carrots, chopped
14 oz tomatoes, diced
32 oz broth, vegetable, low-sodium
1 1/2 cup edamame
4 cups spinach

Recipe Directions for JM Veggie soup

  1. Heat oil in a Dutch oven over medium-high heat. Add onion to pan; sauté 3 minutes or until softened. Add oregano and garlic; sauté 1 minute. Stir in zucchini and carrots; sauté 5 minutes or until vegetables are tender.

  2. Stir in tomatoes, broth and edamame; bring mixture to a boil. Reduce heat, and simmer 20 minutes.

  3. Stir in spinach and cook until wilted.

  4. Divide soup into 6 equal portions and serve.
