Good main course meal. Light on the calories but filling. Good variety of flavors and textures. It's a party in your mouth!

Recipe Ingredients for Jim's Pepper Jamboree

1 potato , pre-microwaved 90 seconds
1 cup frozen corn
1 cup long grain and wild rice
2 frankfurters, turkey , sliced diagonally
8 slices deli ham , chopped
8 mushrooms, whole medium
1/4 cup chopped onion
2 medium green peppers , sliced
2 cups stewed tomatoes (1 can)
1 Salt and pepper to taste

Recipe Directions for Jim's Pepper Jamboree

  1. Peel, microwave, and then dice the potato.

  2. Combine all ingredients in 10 inch frying pan.

  3. Simmer until all ingredients are cooked.

  4. Let stand 5 - 10 minutes.

  5. Enjoy!
