Recipe Ingredients for Jill's Zucchini Bread

3 cups whole wheat flour
1 tsp sea salt
1 tsp baking soda
1 tsp baking powder
3 tsp ground cinnamon
3 eggs
1 cup applesauce, unsweetened
2 1/4 cups white sugar
3 tsp vanilla extract
2 cups zucchini, grated

Recipe Directions for Jill's Zucchini Bread

  1. Grease and flour two 8x4 inch pans. Preheat oven to 325 degrees

  2. Sift flour, salt, baking powder, soda, and cinnamon together in a bowl

  3. Beat eggs, applesauce, vanilla and sugar together in a large bowl.

  4. Add sifted ingredients to the creamed mixture and beat well.

  5. Stir in zucchini until well combined.

  6. Pour batter into prepared pans.

  7. Bake for 60 minutes or until tester comes out clean.

  8. Cool in pan on rack for 20 minutes.

  9. Remove bread from pan and completely cool.
