This is a hearty soup for rainy or cold days. I actually use 1 qt. of fat-free half-n-half and 2 cups of 1% milk. I used to add crumbled, crispy, low-sodium bacon and sauté the veggies in that, but this is a little healthier version. Sometimes I put some frozen corn in also.

Recipe Ingredients for Jill's Potato Soup (low-sodium, without bacon)

6 cups 1% milk
6 potatoes, cubed
1 1/2 cups potatoes, mashed
1 cup celery, chopped
1 cup onion, diced
1 cup mushrooms, sliced
1 cup carrots, shredded
2 tbsp grapeseed oil
1 tsp garlic powder
1/2 tsp black pepper, ground

Recipe Directions for Jill's Potato Soup (low-sodium, without bacon)

  1. Peel and cube whole potatoes

  2. Boil potatoes in water in large saucepan until cooked but still firm (depending on whether you prefer them to break down to thicken or to remain as large chunks).

  3. Drain potatoes and set aside in very large saucepan.

  4. In skillet, lightly sauté vegetables in oil sprinkled with the garlic powder. (You can eliminate the oil with non-stick cooking spray, but garlic-infused grapeseed or olive oil gives a good flavor and a little fat to reduce the glycemic index.)

  5. If you wish, you can combine mashed potatoes (I like Boston Market or my own.) and milk to a thick, creamy consistency in a bowl before adding to potatoes.

  6. Add milk-mashed potatoes combo, vegetables and pepper to the boiled potatoes and simmer, stirring frequently. Soup will be even better on successive days as other flavors seep into the potatoes.
