Standard White yeast bread or dinner rolls If using wheat or other heavy flour or grains, add a third package of yeast

Recipe Ingredients for Jill's Light Bread

4 cups half and half, fat-free or milk
1 tsp. salt
1 cup sugar
1/2 cup Crisco shortening
2 packages yeast
18 cups flour

Recipe Directions for Jill's Light Bread

  1. Dilute 2 packages of active yeast in one cup of warm (not hot) water and add 1 tsp. of the sugar. Set aside.

  2. Warm the milk or half and half in microwave or saucepan.

  3. Add shortening to warm milk and stir until it mostly melts

  4. Add sugar and salt to milk mixture and place in very large bowl.

  5. When yeast has doubled, stir into milk mixture.

  6. Begin to add flour a few cups at a time until it's very difficult to stir.

  7. Roll dough out of bowl onto floured board

  8. Knead dough about 15-20 minutes until it's very stiff

  9. Clean large bowl and grease it with more shortening or non-stick spray.

  10. Place dough in bowl and then turn over so greasy side is up (alternatively, spray with non-stick spray) so that as dough rises, it can stretch.

  11. Place bowl in warm spot free of drafts and cover with clean cotton towel, cheesecloth or plastic wrap. Allow to rise until dough doubles in size.

  12. Punch down in center of dough, roll out onto board and knead again.

  13. Pinch off into dinner rolls (just smaller than a baseball, about 2" in diameter) or into loaves (should fill bread pan about one-third) and place back in warm area to rise again.

  14. Bake 15 minutes at 450 degrees for rolls, 30-45 minutes at 350 for loaves.

  15. Yield: 48 servings (e.g. 16 rolls and 2 loaves; 48 rolls; or 3 loaves)
