Recipe Ingredients for Jillian's Blueberry Muffins

1 1/2 cups self-rising flour
3/4 cup granulated sugar
1 tsp cinnamon
1 egg, extra large
1/2 cup buttermilk, lowfat
1/3 cup olive oil, extra light
1 1/4 cups blueberries, fresh
2 tbsp raw sugar

Recipe Directions for Jillian's Blueberry Muffins

  1. Preheat oven to 350. Line muffin pan with liners.

  2. Stir together flour, sugar and cinnamon in one bowl. Beat together the egg, buttermilk, and olive oil in another bowl. Pour wet into dry and stir. Fold in berries.

  3. Put in muffin pan, sprinkle with raw sugar.

  4. Bake 25 minutes.
