Recipe Ingredients for Jiffy cornbread imitation

2/3 cup flour
1/2 cup corn meal
1 tablespoon baking powder
1/4 teaspoon salt
2 tablespoon sugar
2 tablespoon canola oil
1 egg
1/3 cup skim milk

Recipe Directions for Jiffy cornbread imitation

  1. Mix dry ingredients in a bowl. Whisk together until combined.

  2. Whisk in oil until no lumps remain

  3. Beat egg and milk together and whisk into cornmeal mixture.

  4. Fill 6 muffin tins 1/2 full and bake at 400 for 15-20 minutes.
