This is a wonder summertime treat that goes well with grilled chicken or fish.

Recipe Ingredients for Jicama Tomato and Black bean salad

15 oz black beans
6 oz chopped Jicama(medium jicama)
6 oz chopped tomatoes
5 oz avocado
8 oz Corn, Sweet, Yellow
1 teaspoon cumin
4 tablespoons lime juice
2 tablespoons olive oil
1/8 teaspoon salt
1/8 teaspoon pepper

Recipe Directions for Jicama Tomato and Black bean salad

  1. Cut tomatoes jicama and avocado into bite sized pieces and put them into a large bowl with the corn and black beans.

  2. In a separate bowl whisk together cumin and lime juice adding the olive oil to form the dressing. Toss the completed dressing into the veggie mixture and add salt and pepper to taste
