Recipe Ingredients for Jicama Salad

1/2 jicama
1/2 red bell pepper, finely diced
1/2 yellow bell pepper, finely diced
1/2 green bell pepper, finely diced
1/2 c red onion, chopped
1/2 cucumber, seeded, chopped
1 orange, peeled
1/2 c cilantro, chopped
1/3 c lime juice
1 pinch of cayenne pepper
1 pinch of paprika

Recipe Directions for Jicama Salad

  1. Peel jicama & julienne or cube. Add peppers, onion, and cucumber. Remove pith from orange, cut in half, then cut each half into bite size pieces. Add chopped cilantro. Pour lime juice over mixture and add cayenne & paprika. Toss well to mix.

  2. Let sit 1/2 hour before serving.
