This recipe was adapted from a Bobby Flay slaw... I did not use ancho chilis or chipotle.

Recipe Ingredients for Jicama-carrot slaw

250 g jicama
80 g carrot
2 T apple cider vinegar
1 T olive oil
1 tsp ground cumin
1/4 c coriander leaves
1 jalepeno pepper

Recipe Directions for Jicama-carrot slaw

  1. Use a box grater to shred the jicama and carrot into a bowl.

  2. Dice jalepeno pepper and add it.

  3. Add chopped cilantro and cumin.

  4. Mix ingredients together with oil and vinegar. Let stand for a few hours and serve.
